To be clear, the sweet potato was loaded, not me. This time. Come to think of it, a drink sounds fabulous.
But I digress...
Tonight, I made turkey bacon & eggs & quick sautéed spinach for the kids, so I decided to build on it for our dinner.
I cooked a package of organic turkey bacon in a pan and then removed the bacon and wiped out much of the grease, leaving just a little bit to sauté some onions.
Then I cut about half an onion into the pan and sautéed until almost soft. Added half a bag of shredded Brussels sprouts from Trader Joes and added maybe 1/2 cup of chicken broth so it wouldn't burn. Also sprinkled with garlic salt and salt and pepper. Let soften.
Then I microwaved a sweet potato. When done, I mashed it with a tiny bit of butter. Layered a bunch of the Brussels sprouts mix on top and crumbled a piece of bacon on top, and a few scallions.
Served with a little chicken breast on the side and some of the kids' spinach. Super healthy and the sweet potato was SO good! And super duper filling. Yahoo!
